Can you eat in the mdr on embarkment day

I am aware of that. Princess does or used to. You asked about Royal Caribbean. If you are on a B2B, sometimes there is a lunch for such cruisers. If you purchase the "Key" there used to be a boarding day lunch for such cruisers. 

 

If you are just boarding, the answer is the same. No.

Of course it's open for Dinner, why?  If you are asking about lunch, it is open only on sea days.  If you are asking if the doors are open and you can peak in, than the answer is yes.  IF you are are worried about going hungry, the windjammer will be open.
