Skipping Cable Car.

No not possible. 3 ways up: cable car, walking, riding a donkey (I highly recommend not doing the last 2). Another possibility if you are going to Oia is to take a water taxi from the port to Oia, where they drive you up to Oia and then you take a bus over to Fira. But once in Fita here are 3 ways down, all mentioned above. Santorini is not very accessible, just by it’s nature, and challenging for those afraid of heights and drops and such. My wife hates thugs tram cars but was able to manage, what helps is that it’s a short ride. There are beaches and such you can go to from the tender as well.

Many of the cruise ship tours take the tenders to Athinios, the "other port" where you can actually disembark and take a bus, taxi, etc, and tour the island. It is usually reserved for the ship's own tours, not for independent tours.

Not possible, but you can walk or ride the donkeys. Riding the donkeys is great fun and should be experienced at least once.

When we were in our 30s we rode the donkeys (once)!  Now in our 70s we would leave that "fun" to others.   I would just add that for those that decide to walk (up or down) be very careful where you tread!  LOL.
