If there is something you see that you’d really have your heart set on doing, book it in advance. Once on board, you can also be added to a wait list for a sold out excursion. I've seen the tours tend to be higher priced when on board, only known since I took the list I'd downloaded from the website before the cruise and the brochure in the cabin had higher prices.
