What side of the ship to have a balcony  to overlook the different docks at the ports.

It depends on the port, the pilot, and the day.  Ships do not always "front-in" or "back-in" to the ports.

We just got off in late September and it was port side facing the dock at all 3 of the ABC islands.

As was stated that could change.

The only port where you are guaranteed to "nose in" (and therefore portside cabins always have a view of the island) is Grand Turk.   Ships can't back in due to the nature of the man-made dredged "pocket" at the pier.
