Celebration: why can't you pre-book Emeril's, pre-cruise?

I can book several dining options on Celebration, but none for Emeril's, why?

Does anyone one know the Emeril's pricing for lobster or King Crab legs?

If you don't drink wine, what drinks are given for Chef's Kitchen?

Pre-booking in-cabin Canapés, how are they, worth the money?

Emeril's is not a regular sit down restaurant. You place your order at the register and sit anywhere in the area you want. They give you a number to place on your table and they bring the food to you.

The pricing is market pricing so it varies.

No reservations required at Emeril's.  You just show up and order then find a table.
