You have to register a credit card (just like at a hotel) but you can always tell them that you wish to pay in cash (no checks, no travelers checks) at the end of the cruise. The onboard currency is USD (United States Dollar) -- everything is charged in dollars and paid in dollars.

My sister used Euros to pay her end of cruise invoice on one of our cruises (don't remember which one) but they did accept them.
