Will Guest Services take US dollars, Euros or British pounds to pay any outstanding balances in my account at the end of my cruise?

My experience has been that you must register a credit card once onboard, and that balances are charged against that.

You have to register a credit card (just like at a hotel) but you can always tell them that you wish to pay in cash (no checks, no travelers checks) at the end of the cruise. The onboard currency is USD (United States Dollar) -- everything is charged in dollars and paid in dollars.

On a River Ship it is in Euros.

River cruises are euro only in Europe (even when traveling in non-euro countries). Egypt is Egyptian pounds and I'm not sure about Vietnam/Cambodia.

My sister used Euros to pay her end of cruise invoice on one of our cruises (don't remember which one) but they did accept them.
