Long a staple of family dinners, Grandma Matthews’ handmade noodles is an art the family is determined not to lose. Sadly, producing them is a labor-intensive, pre-industrial process that made them a rare treat. Initially hopeful, we were disappointed to find that our pasta maker doesn’t have a disc kit available to duplicate the thin, delicate originals. We put our heads together and discovered that the thin sheet from the lasagna disc can be folded and cut into narrow strips. This “semi-handmade” method shortens the process significantly and will hold us over until the next generation will likely use a 3D printer to make them.
