Would like to know between which towns the most spectacular scenery can be found on a river cruise from Amsterdam to Basel

The entire area south of Koln is very pretty.

Cruising through the Rhine Gorge in Autumn was spectacular. Seeing castles, vineyards on the hill sides and historic towns - photos could not capture the beauty.

The area between Boppard and Bingen is typically considered the most scenic. Enjoy there are castles lining both sides of the river. You most likely will have the option to tour Marksburg Castle which I highly recommend. If you stop in St. Goar, a tour of Rheinsfels Castle is also well worth it.
