My expectations would be that they might allow you to board on the second day if the ship stays in port the first night, but I doubt that they would give you a refund for the night not used. After all, the cruise line would have an empty cabin that cannot be used by anyone else, so they would not want to give up the revenue for that night. Whether you can board late depends on the cruise line and the local authorities from the port in which you want to embark. It also depends on local cabotage laws.
