Traveling on the NCL Epic and wondering if we would be able to make a 12:30 flight back to the US?

Yes. Very commonly discussed here that it is an hour drive, and you need to allow minimum 2.5 hours to clear the process for DIRECT flights to the US. If your flight stops elsewhere in Europe, you have a little more time. Flights after 11AM are fine.

A airline/flying misnomer here. You need that 2.5 hours for a NONSTOP fight to the US. A "direct" flight may actually have a stop elsewhere in Europe; direct flight may have the same number, making someone think it is a nonstop. Just trying to keep it clear...
