Unfortunately that does not always work.  On my last cruise there was a lady tasting her food with her finger that went in to her mouth at the buffet each time she picked something to see if she wanted more.  Therefore all her saliva that was on her fingers went on to the utensil she picked up.  ECHHH !!!   Never went back to the buffet unless it was something served to me from behind.

You can always get a clean serving utensil.  Either use one from the folded napkin set up or ask a nearby server.

 I take a napkin and wrap it on my hand to pick up a utensil.

I always do that unless on Oceania where buffet food is served to guests!
