There are some iguana farms on the island and there may be places where iguana is on the menu. But focus on something not endangered like lionfish! Agree with Crew if you can find lionfish, although it doesn't seem to have been as prevalent recently. Not exotic but maybe just concentrate on “local” food like baleadas or anafres.
