Oh, I'm sorry, I didn't notice our links were the same. That's definitely the recipe. However with a high yield (cruise ship size batch, LOL!), it needs to be adjusted down, but that's the recipe.

OP — take a look at the recipe.  It has egg yolk, anchovy, and anchovy paste.  I believe it is the original.

I suspect you are correct. The recipe and what they actually use in these days of cutbacks can be different things.

I wouldn't be surprised if they use liquid pasteurized egg yokes. This way the yolks are still raw but the salmonella they may contain has been killed. Maybe I'm wrong but the days of getting a classic raw egg yolk Caesar salad prepared tableside in finer restaurants in the U.S. has mostly been over for decades due to public health precautions and salmonella. I like a good Caesar Salad.
