Assuming you mean prior to being on board, the only ways I've seen to do that are to use the app, call sailor services, or use your TA if you have one.

You can do it on the app 45 days before embarkation.  Your TA can do it for you thru their portal. or you can call Sailor Services and they can do it.  You cannot do it on line.  It is 60 days for suites.  IF you don't get what you want, no worries--they open additional slots at embarkation.

I've had good luck doing the meal reservations on the VV App. Just make sure you begin at midnight 45 or 60 days prior. You'll need the app anyway to submit your photo, passport and credit card info.
