I will be on Brilliance of the Seas in March 2015 and it gives you the option for making a reservation for the Chops Grille and states $30 per person. You will need a credit card to make the reservation online before you board the ship. Also, you are better asking cruise line specific question on the cruise line's forum, rather than in a general area such as this one. Thanks so much! :) If you wait you may have trouble getting a table, personally I never have, but some report it happening to them. On the other hand if you have some OBC on board may be better. We like to pre-book the specialty restaurants just to make certain that we get the day and time we want. Should you change your mind once on the ship and decide to cancel your pre-booked dinner, you will get the refund back as shipboard credit on your account.
