Haven't sailed RCL in some time. Using onboard credit to purchase 3-night dining. The site has you pick time (6:30) on second night,  but what restaurant?

Do you buy the plan with the reserved time and then book restaurants elsewhere?

In theory, they book the restaurant and you find out which one it is when you board. In practice, they may not actually book anything. 

Just go straight to one of the specialty restaurants or the specialty dining desk when you board and sort your three nights out then. It helps if you can be a bit flexible regarding the times and specific restaurants.

What about My Time dining? The site only lets you book one night.

Yes for MTD you have to book each night separately. Thanks

We always do MTD and never reserve a time. We just show up whenever we want and get seated pretty quickly. We always ask to be seated in the same section each night and so far, we have never had any problems with that.
