How late are the bars open?

Nightclub open til after hours assuming anyone is around. On CB, it wasn't closing before 3am most nights...

Casino bar til late (post midnight but usually wrapping up by 1 or so). 

Ocean Now delivery of any of the drinks or food from room service.

International Cafe for food, coffees, waters, if your ship has one.

Room service (menu on app, etc).

It's different on different ships and itineraries. Example on Hawaii cruises the casino is closed while the ship is in Hawaiian waters. There are a number of live threads from different sailings on these boards. They have photos of the daily events and venue operation hours on the last page. The International Cafe is open 24/7. The nightclub (if there is one) should have late hours as should the casino bar. Crooner's or similar lounge should be open for some time after midnight.

Believe room service and Ocean Now is 24 hour service. Ocean Now is delivered to anywhere to your location.

I used to run a sleep lab. You are right, the ship's movement, noise, strange bedding, more alcohol than you might at home, an exciting late night show, combine to mess up your sleep. You may have travelled to a different time zone, which also affects your sleep pattern. 

One secret the entertainers onboard do, who travel constantly, is keep the same schedule regardless of what the clock says.  In Europe, You might see an American entertainer reading in the buffet or IC at 2 in the morning.

Here is a link to some sleep hygiene tips. Truth is, I know all these tips and still have trouble sleeping on the ship. So what do I do? Often I find other guys start to gather about 4 or 5 in the buffet and chat.
