Great to read an objective review from a non-Disney person. Just one small correction. Secret Garden is actually Enchanted Garden. Rumor is that when the ship goes into dry dock in October, i tmay be going through some changes. Not exactly clear on what those may be.

I don't know how true that is. The adult areas on the Wish didn't compare to those on the previous ships. That was one of the chief complaints from experienced cruisers.

Yes, you can get water from the bars. I actually did this myself, while waiting to be escorted off the ship for the second part of our cruise. I need to take some pills and went to the Bon Voyage bar and asked for a glass of water.
Yeah, the lines were long, but they were organized. Separate lines for each boarding time. We got to the pier at 10:30 for an 11:15 boarding time and were on board by noon.
There are no tables for two (two tops), but you can request to dine alone at a 4-top. It's not guaranteed though. We did a B2B in November. The first cruise, we were seated with another couple. The second leg, we were seated alone.
The Wish is currently doing 3 and 4-day cruises. The Fantasy is doing the longer cruises. I would go with the Fantasy. If you're an adult going without children, I would definitely choose the Fantasy, since IMHO, the adult areas are better.
