Can you make specialty restaurant reservations online in advance or do you have to wait until you're on board.

We wait to book specialty restaruants until we're on the ship. Never have had a problem. ;)

First let me explain I really overdo the planning aspect of vacations, including paying for everything. I like, if possible, to spread out payments of things. So I like now that we pre-pay things with 100% refund within reason. Anyway, I book my Speciality Dining ahead of time to pay that amount ahead of time(we usually eat several times at these locations). However, be advised that times to pick are limited if you reserve ahead of time. I don't mind as if I don't want the times I picked when I get onboard I just change them. Do that the first day and never have had a problem. Then a couple months or so close to cruise, I book any Princess tours I will be taking and get them paid. Then on cruise I pay for the private tours. Again, it is just spreading out the cost of things no matter how small!!

They don't open up 100% of the capacity for pre-booking, so there is always space for on board booking.

Do any of the specialty restaurants offer Wagyu beef? - If not, is it ok if I bring my own and ask them to cook it ?

You cannot bring any of your own fresh/frozen food on board. No way is this possible.
