Because when you have a different waiter every night and you don't develop a relationship with them, you are much more likely to "forget" to tip them at the end of the cruise. Possible, however, you are not only tipping the waiter you have in the MDR, but the other staff, too. Are people that tunnel vision that they don't know they are tipping others such as the cabin steward, etc.? You normally only see your MDR waiter in the evening.
