Not sure having the Maitre D's email address will accomplish anything. All dining requests/changes are handled once you're onboard. There'll be a notice in the Patter in your cabin with where he'll brand what time.

You can't get email addresses for the maitre d' or CD, or Captain, etc.

On some other cruise lines, it is possible to email

the maitre d' your dining preference in advance.

 

I presume they have an address just for this public contact.

I am not aware of any line that publicly displays email addresses for the Maitre D. I know Carnival people have figured out addresses, but it is also known that the Maitre D's have no responsibility to respond to guest requests made via email.
