Other than garden grill, the Irish dining spot and the three dining rooms are there any other dinking options that don’t reunite paying extra?

There is a buffet set up at Margaritaville for breakfast that does not cost extra. There are usually snacks set up in the casino in the evenings that don't cost extra. And you can have "continental breakfast" delivered to your room via room service in the mornings by completing the provided door hanger cards. That include cold items like cereal, fruit, and pastries as well as milk, coffee, and tea.

I just remember that Breakaway had a themed buffet lunch in Moderno on sea days. Do you know if they do something similar on Escape?

Not really. Complimentary Dining Include:

 

O'Sheehan's Neighborhood Bar and Grill

Garden Cafe Buffet

Savor Main Dining Room

Taste Main Dining Room

Manhattan Room Main Dining Room

Margaritaville Breakfast (only)

Continental Breakfast Room Service (only)

The three MDRs serve the exact same menu, so other than a different ambience been Manhattan Room and Taste/Savor (which are extremely similar), there isn't much "variety" in complimentary restaurants at any given meal.

O'Sheehan's and the Garden Cafe will have specials of the night. Prime Rib, BBQ, Seafood Night, etc.
