First timers, 4 nights, no red meat. Which specialty to book?

I would say without a doubt Aqualina, you have several options involving fish plus you have a really nice vegetarian dish there.  The Prime C menu is dominated by steaks many ways, lamb, pheasant etc

 

You cannot do any speciality restaurant bookings before you board, and as it is a short cruise I would head straight to the desk for reservations (there is always one at the entrance to Windows Cafe on Deck 9) so you get a booking.  That said, Aqualina is usually easier to get a table in than Prime C as more cruisers seem to be red meat fans
