We were able to book all 3 each cruise on day 1 of each cruise. We loved Sabor and visited it twice on the second cruise. The second time we ate there, we told our waiter that we were hesitant on coming back there due to the night in question being lobster night. He assured us that he would provide us with the dining room lobster (2 each) on that night along with whatever else we wanted. We booked it and , if we had not been so stuffed, he had offered us additional lobster tails. As to your actual question, Liberty does not really pick the 1st or 2nd night restaurant, Book it when you board. We enjoyed every restaurant there. Even Johnny Rockets for lunch and a milkshake. Then moved to restaurant and between courses each table had chance to quiz the suspect's. Free flowing wine and the best thing it was offered to us on board for half price.
