I can confirm by seeing it first hand that you can show up at the table and buy chips with euros or USD and that when at the cashier they pay out in USD.  No clue if you can REQUEST to be paid in Euros at the cashier but doubt you could

The casinos in Europe use Euros.  In Monte Carlo, we had to change $US.

The OP did say "European Cruise".  Also, while most European countries use the Euro, some mainly in the north and east do not.  Monte Carlo was a blast, we "bought" 100 Euros worth of 5 Euro MC chips as souvenirs and our friends and family loved them

While on a European cruise, we visited several casinos in the ports of call.  As I reported, they used Euros.  Weren't those "casinos on a European cruise"?  And didn't I point out the distinction?

As stated, not every European country is on the Euro including ports of call X visits like England and Norway, for example.  European Itineraries vary
