I've done the UST on the Grand Princess but am considering doing it again on my upcoming Regal Princess cruise. I've sailed on the Regal several times already and know the ship itself is significantly different than the Grand.

Do you think below decks are different enough to justify another UST?

I've taken the UST on the Caribbean, Regal, and the Royal. I most likely will take it on all future Princess cruises even on the same ships as I enjoy it.
I also enjoyed the Chef's Table and will sign up for that again

You must have a lot of cook books, robes, picture frames, etc. What do you do with all that swag?

I would think so, just based on the age and size difference. We’ve only done one - on the Regal - when she first hit the seas in the Caribbean, fall of 2014. Thoroughly enjoyed it, particularly the galley/kitchen, the medical center and the print shop/area. DH loved the engine room, the bridge.....we’d consider doing it again.

I am sure you mean engine control room, not the engine room.

I wouldn't say that the ships vary be an appreciable amount, that would be noticeable on a tour. To me, the reason to take more than one would be to get different perspectives from different department heads, and different answers to different questions asked on the various tours.
