Just purchased a guarantee baclciny on Nov 25th sailing on Escape and noted that I have already been assigned a cabin. Is that unusual?

Not at all...rooms can be assigned any time between booking and embarkation.

Not at all unusual after final payment date. It has happened to us more than once.

not at all. We are cruising the Pearl in about a month. We booked in May and I think we got our guaranteed cabin about a month or so later.
