How can I tell what cruise promo I used when I originally booked a cruise? I may have to cancel or transfer to another cruise and I need to know the penalties based on the promo used.

It should be on your confirmation email you receive when booking near the bottom of email if you booked directly with Carnival.

Correct, under " guest notes" at the start of the second sentence, e.g. " Early Saver t&c apply" You do have to hunt for it, they don't make it easy.

So if mine says “VIFP member,” is that a category?  I asked for ES.  Which is better?

On the guest notes in your cruise confirmation,   If it says VIFP then that means you have a past guest rate which is sometimes part of early saver. under guest notes, it should say this:

A valid and qualifying VIFP Club number is required from at least one person in each room to be eligible for this rate.

for early saver, under guest notes it should say something like this:

Early Saver terms & conditions (T&C) apply. OBC is non-refundable/non-transferable, issued as a credit on Sail&Sign account of $12.50pp/$25 per room on 2-5 day sailings, & $25pp/$50 per room on 6+ day sailings. OBC may not be applied to cruise fare or Taxes/Fees/Port Expenses. Non-refundable/non-transferable .....

This is mine:

2)

A valid and qualifying VIFP Club number is required from at least one person in each room to be eligible for this rate. Deposit is non-refundable. Changes made to the reservation may result in the assessment of cancellation penalties or service fees. No name changes are allowed. Cancellation prior to final payment due date will receive a future cruise credit in the amount of the deposit less a $50 pp service fee. If you find a lower cruise rate, based on the total cabin occupancy & not from the booked ancillary services, such as air, transfers, prepaid gratuities, or Taxes, Fees & Port Expenses contact your Travel Agent or www.Carnival.com.

no mention of ES even though I asked for it.  Should I be angry?  What is my disadvantage?

Asking for Early Saver doesn't help if there are not Early Savers rates available at your time of booking

I was told that I was being booked ES, but I don’t see the words “Early Saver.”  I’m pretty sure it was available.  I booked 3/19 for 12/20.

Early Saver is always available when bookings is release. What Carnival seems to be doing the past year or so, since Early Saver sometimes gets a bad name due to the 50 dollar fee, non refundable deposit and other conditions is they re-name the Early Saver rate so you dont see it and you dont know.

The Past Gate Rate/VIFP rate is Early Saver but you wont know until you read the terms and conditions. And whenever they have a sale and they name the rate after the sale like the Cyber Monday sale , mostly like that fare code is also early saver

I often book Casino fares and there's NOTHING in the notes that says that.  It's one thing about Carnival that bugs me.  While they're very transparent when you're booking by showing you all the different fares for which you qualify, once you book, your confirmation is rather vague.

That's why I now make a note on my confirmation as soon as I receive it to show what fare I booked under, especially since the casino fares often vanish after a short period of time.  And I have to make a note about what perks I should receive with that fare.

Guest Notes on my 3 booked sailings all specify "Early Saver T&C apply..."

I'm not a huge fan of ES, personally.  I have these 3 cruises booked ES because my TA had groups for them that give perks.  Typically, I book Casino fares as they're lower that ES and while they now have NR deposits (which I really don't like), I'll take the chance that comes with that NRD as a trade-off for the lower fare and casino perk(s).
