I plan on purchasing cruise insurance separate from what Carnival offers (Allianz).

Do I go through their website to purchase it?

Which plan do I choose?

Do I need to purchase the insurance before I purchase the cruise?

Call a travel insurance broker like InsureMyTrip.com (no extra cost to you). Insurance is not “one size fits all.”

Generally, you buy after you put down a deposit. By doing it this soon, you get pre-existing conditions covered.

I agree with the previous poster about getting more information from the cruise insurance forum on cc.

Here's a reply I wrote to a similar question, just a few hours ago, about the Travel Insurance section of CC.

The mods have already moved that post, so you wouldn't have had a chance to see it.

You might want to post your question on the Travel Insurance section of CC:

It may also be helpful to browse some of the previous Q&A's to get a general feel about this.

Importantly, there isn't any single "standard insurance coverage".  The different policy types can vary dramatically, and some terms and conditions will be better for some, and other policies for other travelers, etc.

I'd suggest you CALL

https://TripInsuranceStore.com

They are a broker (no extra cost to the traveler), and deal with several vetted travel insurers, each of which typically have several different policies to offer.

Ask questions!  They are very patient.  And they'll probably ask you some, too, while trying to help you figure out what type of coverage will be best for you.  (They do not "upsell", so don't worry about that.)

Many of us here on CC have purchased policies from them.  We are among that group, and additionally, we'd had to make several claims, and all were paid without difficulties... and that's what really matters!

Like several other people have stated, there is a dedicated insurance forum on Cruise Critic. I usually just purchase my cruise insurance through the travel services of a nationwide automotive club. More importantly, I purchase that insurance at the same time I book that cruise to get that pre-existing condition waiver.

I will completely agree with "calling" the Trip Insurance Store. Steve and his associates are wonderful  at getting you a personalized policy that will fit your exact needs.

Steve is also a guest contributor at times on Cruise Critic.
