They were more potato flavored pancakes versus my mom's recipe where it's mostly potatoes with a little flour thrown in (maybe a Polish vs. German recipe?). Served with sour cream, they were delicious. She is Ukrainian. I've never seen potato pancakes on board. One of my mother-in-laws other specialties was cheese Blintzes, made with farmer cheese and served with sour cream which I call Ukrainian ketchup. They have decent cheese blintzes in the buffet. Bery Posted August 30, 2018 #13 Share Posted August 30, 2018 The Irish recipe for potato pancakes (Boxty) is: in blender grate 4 medium size potatoes with 1/2 medium onion + mix with 1 large egg and 2 tablespoons of flour.
