Late today, since I had to drive DD to Torontp for a (didn't happen) Board exam. I guess we'll get to do it again, when they fix their mistake.

 

DH and I were scheduled to do a river cruise/bus tour in Europe with the Oberammergau Passion Play included in August. When COVID hit, the play and river cruise were cancelled. Today, the insurance was deposited back to my credit card. We're just waiting on the travel agency portion now. I won't get anxious until August.

 

I loved seeing the eagles and eagle nests when we travelled on the Rocky Mountaineer a few years back. And on the Alaska cruise, too.

 

I love curry, but by the time we got home, DH had eaten and DD and I were wiped. Toasted bacon and tomato sandwich for me!

The Rocky Mountaineer is something I think I would like to do at some point. I had a very nice experience with Via Rail from Ottawa to Quebec City several years ago, and I think I would enjoy the Western Provinces.

What’s a coffee soda?

I make coffee ice cream sodas with these approximate amounts of ingredients.

In a 16 oz. glass add:

   -- 2 - 3 tbsp. coffee syrup (I use Eclipse)

   -- 2- 3 tbsp. light cream (you can use 1/2 and 1/2 but it won't be quite so rich)

   --Mix these two together in the glass

   -- Slowly add ice cold club soda to about 2/3 to 3/4 full  (if you pour too fast you will get a lot of foam)

   --Add your favorite  coffee ice cream carefully as it will foam as well.

   -- Enjoy!!
