We are going to Alaska in May and have booked the Italian restaurant and was wondering if they have spaghetti and meatballs on the menu?  Maybe chicken parm? Or something close to one of these two.

I am also going to Alaska in May. It doesn't look like La Cucina has anything like that. You can look at all the specialty dining menus by going to your booking, then Explore and Plan, then Dining.

Several NCL ships sail to Alaska in May, not just the Bliss.

Why would an Italian restaurant have either item on the menu?

They are not Italian, but are quasi Italian American fare.

for the same reason that many chinese restaurants offer chop suey, which is not a dish that originated in china. these are dishes inspired by the flavors of the home country, but that have been altered to suit american tastes. many americans do indeed travel on NCL.

chicken parm and spaghetti and meatballs are two of the most popular dishes on italian restaurant menus in the USA and many folks expect to find them in "italian" restaurants when traveling.

Be cause the are "Italian" for the demographic being served by the restaurant.

Kinda like McDonalds serves a breakfast platter of "Spam, Eggs, and Rice" back home... which resonates with the demographic being served, but is "Not McDonalds", but quasi Hawaiian American fare.

The lasagna is outstanding as is the Osso Bucco.
