Chef's Table

We are sailing on the Ascent in December.  This will be our first Celebrity cruise; however, we are seasoned Royal Caribbean cruisers.  We are interested in booking Chef's Table as we have enjoyed it so much on Royal.  When we called to inquire we were informed that while we can book now, we won't know the date until after we are onboard the ship.  Did we receive the correct information?  I'm so surprised they don't provide this information in advance.  What if it conflicts with something we already have planned?  We are a party of 6 and are concerned that if we don't book in advance there won't be slots for 6 people.  Thanks in advance for any insight you can provide.

Our booking shows it is the embarkation at noon (placeholder).  However when we look at the cruise planner it has the dates and times.  We know that they are on night 3 and night 6 of our cruise but we don't know which one yet.

In my experience you do not need to worry about not having enough slots. On sailings with greater demand, they have opened up the Chef’s table on more than one night. 
 

@NMTraveller on our Equinox sailing the CT with wine pairing was a whopping $249 pp. we passed.

3 am on the first day of the cruise for our upcoming Christmas sailing on Solstice.

It’s an additional $60 per person for the wine pairing. We had premium drink package, so we didn’t do the pairing and just ordered wine using the package.

I would think that this would be the best way to avoid being assigned to different evenings in the event they run the Chef's Table more than once during your sailing.
