We always just grab something at the windjammer when it opens, then go back to our room, grab our bags and get in line for disembarkation

I have always dreaded debarkment.   But have found it to be much nicer if we enjoy a nice relaxing breakfast in the MDR then walk off ship to get our luggage in the terminal.

In a suite we sometimes go very early to the specialty restaurant (leaving our bags in our cabin) then still self disembark.

This is the way to go, depending on what ship and what you have access to that morning.  CK, specialty, or MDR
