Because those ships have four differently themed dining rooms, presumably so people can move among them during the cruise. The other classes have two DRs with similar decor, etc., so one can be designated as fixed and the other as anytime.

It is enough time. The cruise lines usually recommend after 11:30 a.m. or so. No need to rush off, either.

I have read that it's better to have the person be a no-show than to cancel, but maybe that was for another line. Perhaps someone else will pipe in.

Brightline's station in Orlando connects to the new airport Terminal C, but it has a separate entrance/pickup area if you simply want the train access. The entrance is across from the South Remote lot, where the gas station is.

I took Brightline from Orlando to Ft. Lauderdale on 12/10 and returned on 12/17 (both Sundays). I was impressed and will take it again next May one-way to catch a TA. Trains were on time, clean, and comfortable. Well, except for the inconsiderate passengers not using earbuds, but that happens on planes, too. My cab from Pt. Everglades to the station was only $16. I just gave the guy a $20 bill. Uber was running over $35 at the time.

I was on the Nieuw Statendam a week ago, returning to HAL after 10 years, and found the food much better than on Celebrity last year. The ship was clean with lots of interesting spaces, my cabin was fine (Family Oceanview on Deck 1), and overall I had a great time. I'd book HAL again if the price/itinerary were right.

Any of the hotels at the Pooler exit (near the Savannah airport) are fine for a one-night stay. Plenty of restaurants and shopping, too.
