This will be only our 2nd time on Celebrity and our other time was a lifetime ago.  We will be on the Apex which has 4 regular main dining rooms. We selected my time so we can try all 4 .  Can we reserve our dining times in advance or do we have to wait until onboard?

You can select all 4 of them if you want. You can reserve your SD times and restaurants now in your CP.

We discovered that even with reservations it was still first come with no line for those with reservations, and the first night was a bit of a mess with very crowded lobby.  After that we cancelled all our reservations and went at about 7:15 and always got seated quickly as folks were leaving for the 7:30 show.

Agree about the first night, no matter if it's SD or TD. The great thing (for us) about having reservations for SD is we always request the same table for the entire cruise. Walk right in and sit down. Now where is the sommelier. 🍷

We were on the Apex two weeks back and I had made SD reservations at the different MDRs. Surprisingly there were long lines on Day 2, at both Tuscan and Normandie, people wanting reservations as well as those like us with reservations. But it was just that one evening, other days were just fine.

We didn’t have that experience at all. It worked like any restaurant on land - one line to check in then those without reservations have names and stepped aside to wait, those with reservations were seated pretty much right away

It depends on the itinerary but it usually is 7pm and 9pm or 7:30pm and 9:30pm. You won't know for sure until you are aboard the ship but look in the app at a cruise with the same itinerary as yours but with an earlier sail date and you should get a pretty good idea as to the show times. (Also the menu rotation)

Don't forget about Caravan which is in The Club.  It's usually 6pm and 8pm or 8:30pm and 10:30pm, once again depends of your particular itinerary.

I was on Apex in May.  The first day they give you a card in your stateroom with a suggested dining room and time "reservation".  Thereafter, we booked our dinner time and venue on the Celebrity APP.  It was strange, however, because the app didn't allow you to book a reservation too close to the end of your shore excursion.   It didn't say that but that's what it did.

Onboard phone bookings also worked efficiently.

Just another note about Caravan. It’s a delightful circus-like show- one of the best shows we saw on our Apex cruise in June.
