What currency should I tip in?

If the ship will be sailing out of Sydney for a whole after your cruise, then tip in Aussie dollars if you have them. The crew will no doubt get some shore time or want to do some shopping there.  But if it's close to repositioning,  then USD.

Anything. If you have left over Australian or New Zealand money use that first - much cheaper than changing it back. After that switch to 💲 , it makes no difference to the crew as the ship will change any currency for them.
