We just did anytime dining recently on The Enchanted.  We did choose it pre-cruise.  In the afternoon when we decided what time we wanted to dine, we went on The Medallion app. to see what dining room reservations were available and chose a dining room and time.  That worked well for us--we were seated right away.  I know you can just show up at the dining room and wait, but we did not try doing that.

There is a whole new system called Dine My Way and you have to make reservations on the Medallion app.  The old system of Anytime and Traditional is long gone.

You don't have to make reservations on the app, you can just show up, or you can speak to the restaurant manager and book a time

On our March cruise we didn't make any reservations, just showed up when we wanted to eat.  We had little to no waits most nights.  However, we prefer to eat later, usually around 8 or so, after the first show.

We also ate at a specialty restaurant by just walking up and asking, after trying to make a reservation bly phone and being toldall were full.  We waited maybe 20 minutes for a table.

You don’t have to make reservations on the app.  Just show up at the MDR when you’re ready to eat.  Traditional dining per se is gone, but lots of folks have been able to secure the same table at the same time each night  once onboard.
