Low calorie and low car desserts

The only low carb dessert I had was the sugarless ice cream.  But they will probably come up with something for you, especially if you do what MSEm suggested and talk to the chef or your server.

Dining room manager talked daily with our SIL about his special dietary needs. Viking does a great job in this area.
