You are correct that you did see once-upon-a-time that all cruises would be always included although there was an asterisk that some passengers would not get always included. But now for most cruises you have a choice between simply sail and always included so you have to do the math to see what gives you the features you want at the price you want. stay closer to the midship elevators for best access to oceanview buffet and restaurants

You dont get charged corkage at boarding. You would only get charged if you bring the bottle to a bar or restaurant. if you enjoy the wine in your stateroom, or even if you bring a glass out of your stateroom, no corkage
