All pricing (other than the coffee card and grats) is dynamic. Grats is $14.50/day per person (+$3 for suites). Select everything until you get to the page asking for passenger information. In the upper corner will be the price of the cruise with applicable taxes and port fees. As noted above, gratuities will be 14.50 or 17.50 pp per day. You can prepay this or it will be added to your cruise account. As others mentioned, ships and itineraries can determine the extra costs that some may want to purchase. When I book as a solo, I book only cruise cost.
