Take wine onboard 750ml>1.5L

No, it says 750ml.  PCL states the size in your passage contract and even on your luggage tags when you print them out.

I believe it's another cruise line (don't ask me which one) will allow 1 x 1.5L versus 2 x 750ml bottles.  It's too risky to try it with Princess in the hopes you get an employee who lets it go.

Your question is phrased as “get away with” which suggests that you are aware of the rule and are wondering if you can circumvent it. The answer is: No one can predict the outcome.  I wouldn’t risk the chance of having a pricey bottle of wine confiscated and left behind at the port.  And if the magnum is a cheaper bottle of nondescript wine, they have plenty of that on board included in the Plus Package.
