I once spent 3 weeks in January in the southern half of the South Island and the only time I didn't wear a jumper was when I was walking the Routeburn track carrying a backpack - I did still have a flanelette shirt on. I come from Melbourne, not the tropics, so I am accustomed to cool weather. You can be lucky and have pleasant weather or you can even cop some snow.
