Sophia's Day

Just asking all people who are paid up posting members and those that lurk and have yet to post ... to raise a glass to toast Sophia and her late hubby who's birthday it is today.

Just because we are all on different tables around the world, it doesn't in any way devalue or dilute the toast and our solidarity and support and friendship - and token of our thoughts - which are with her today!

Jeff, that is such a very kind gesture and l thank you so very much for your thoughts.

Tables around the world make me think of the glorious days we spent on the QE2:)

I have so many memories but also have such a lot to look forward too as well.

Sophia :)

I raise my glass to you and your dear late husband on this day. You have great support and best wishes from the Cooler Gang on this day, Sophia.

Thanks, Jeff, for the gorgeous and soul soothing pictures of the scenes from around your home. We all need something like that once in a while.

We had a lovely lunch today ..... sort of Christms Lunch in Summer!

A Packington chicken with pork and chestnut stuffing with a lovely sauce (Noily, stock, double cream, lot's of butter, dijon and fresh chopped thyme) and some croquettes and green beans. And we thought a bottle of champers appropriate to toast Sophia and her hubby's birthday. I even got out our plastic flutes and not the normal jugs.

I am quite convinced he was watching over us and was pleased we were all with her today.

:)

Quite right .... and they are frozen. I've learned how to cook them and they are better than fresh. Every day ..... we learn!

Also .... thanks to all who thought of our Sophia today. One of the lovely things about the water cooler is that S. told us. She probably wouldn't have mentioned this at a real dinner table because people don't and I think it nice we were able to be here!

Polar plunge to keep them verte

No, I simply pop them into the boiling water, bring back to the boil and then switch the heat off. They always seem to be perfect. Better than fresh. I guess it's because they are fresher than fresh. I think there's a tendency to overcook.

So pleased to hear you are hanging up your wig. What did you specialise in? Will you miss it? What do you plan to do?

In case anyone is interested .... it's Singapore's National Day on Saturday.

We've been in Singapore when this is going on and it is a rare blend of both nationalism and patriotism and the the day is great but the fireworks in the evening are wonderful. There's a live stream on Saturday and there is an official site.

Yes, it is good to think and toast to our Sophia. And it would be nice indeed to be in Singapore, enjoying the festivities.

I haven't thought about dinner yet. The carpenter should be coming to examine the patio and decide how to proceed. I wish I could spend more time at the Cooler instead!

Good Day One and All...:)

Thank you very much again for the kind messages.

It's very gloomy today, with lots of nasty rain showers that weren't forecast until much later so the galley is open and at full speed to feed the lodger...

Ocado dropped earlier and brought along some beautiful free range pork chops so they are currently roasting away with some onions and will be served with buttered corn, peas and home fries. Whilst it's raining it's still rather humid!

The garden workers have now all clocked off for three weeks and by the time they return schools will be back and we shall be into the Autumn...but all the time getting nearer to my cruise...:D

Just enjoying a wee glass of the usual.....

Hello Coolers:)

Blimey, it's quiet on here this weekend! Had a lovely surprise this morning when a huge box of Cadbury chocolate bars arrived from my lovely daughter and son in law as a cheer up gift...all my favourite munchies are there so I guess the cruise diet will have to wait a little while longer...

Torrential rain hit here last night, so bad that pup refused to go out....l believe Lincolnshire got it pretty bad and if the remains of Bertha reach us tomorrow it could be a nasty day..

Mixed grill for luncheon today with profiteroles for dessert.....the lodger likes them.

Jeff, love those prawns yesterday....are they a kind of Piri Piri? I love garlic prawns but only in Spain!

Hello Sophia,

They were Chilli Prawns .... think Singapore Chiili Crab but with prawns.

Garlic, ginger, chilli, fresh basil, sugar, lots of white pepper .... and my secret ..... cream of tomato soup reduced. It was really lovely. Not boasting ... just sayin'.....

If you are interest the live stream is pretty good and fireworks will start I believe in around 30 minutes ...

A bit of a storm last evening, not for long and no power out. Today is lovely, but Bertha is threatened for most of us tomorrow. The chicken thighs in spicy marinade tonight, and at last I managed to get the batter coated haddock fish fingers in Waitrose yesterday, Jeff. Will try them next week, and hope DH (who can be a bit sniffy about frozen food) will approve.

I am still getting aggro on a Seadream thread, keep hoping he will desist as I know I have not done anything to deserve it! So am staying away from posting anything there again.

Why oh why do people enjoy upsetting people. There are many of them ... sadly. It's funny how many of them never miss any chance and manufacture opportunties where there is none. I feel sad for them.

Cheer yourself up and watch the exuberance on the live Singapore stream. Fireworks starting shortly ... I hope.
