Trying to assess lunch options once we get on the Apex. Will one of the MDRs be open or is it head to the Ocean View and battle the crowds there?

Celebrity as a rule doesn't open the MDR on embarkation day for all passengers. It's only available for Concierge Class and I think Zenith?

Bring along your battle armor.  You are allowed to elbow those that cut in front of you and those that use their fingers to load their plates.

The pizza station is very popular, but even if it's busy the wait certainly isn't unreasonable.

I have to say given that Celebrity is considered a premium mass market cruiseline and even on their newest ships there aren't many complementary eateries on embarkation day they REALLY should open up the MDR for all passengers as a choice for embarkation lunch. NCL does this on their newest ships and it was a wonderful way to start your cruise having a calming lunch being served. Whatsmore they use their nicer aft MDR which is one of the nicest MDRs of any mainstream cruiseship

The buffet is not the hot mess it used to be since passengers have been able to drop carry-on bags when getting on the ship. People don't hog tables while waiting with their bags; they eat and can roam the ship.

Cabins are ready for carryon drop off as soon as you board the ship. That's where you will also pick up your Seapass card. You are asked not to linger in your cabin. The general announcement will be made around 1:PM that cabins are ready.

This is true on all NCL ships, not just their newer ones.  They don't advertise it but it is longstanding.  We've always had a relaxing, uncrowded lunch in the MDR on embarkation.  By the time we finish eating the cabins are ready.
