I've been on this thread looking for recipes, only to find that from page 14 on, it's got some kind of malicious content from who knows where. I can't find a recipe for the corn chowder that was so delicious. Does anyone happen to have this? I had it but lost it :(

Just got back from a cruise on the Carnival Vista. We ate at the Cucina del Capitano. For dessert we had the Crostata di mele CoppettaSlow-Baked Italian Apple Tart Topped withHazelnut Streusel. Basically, the apple tart.

On top of the ice cream was a type of caramelized brittle. Looked to be all sugar and possibly brown sugar at that. But the brittle tasted exactly like a toasted marshmallow.

Does anyone have a recipe for a brittle/caramelized glaze sticks that was placed on the ice cream portion?

Any thoughts on was to replace the red wine with for the chilled Strawberry soup?

The alcohol free red wine from MADD is completely zero proof and tastes quite nice. That probably would work. You can buy it in grocery stores in Ontario.

Strawberry Bisque for 4 - 6 persons

 

INGREDIENTS

 

Strawberry IQF 16 oz.

Ice cream vanilla bulk 6 oz.

Cream heavy fresh 3 oz.

Creamer half & half 10 oz.

Sour cream 1 tsp

Mint fresh for garnish

Salt & pepper pinch to enhance flavor

Sugar white granulated to taste

 

PROCEDURE

• Blend strawberries to a smooth paste.

• Combine all ingredients together (Strawberry puree | ice

cream | heavy cream | milk | sour cream) with stick blender.

Adjust consistency & check seasoning. Refrigerate

• Serve in chilled soup cups and garnish with mint sprig

A CAPITAL sin! NEVER EVER put cream in a spaghetti Carbonara! *****! And Carnival claims to have an “ Italian” influence?!
