My husband and I have been dieting for the past 3 weeks, and today is a treat day. These taste like heaven! Coconut Ranger Cookies Ingredients 1/2 cup butter, room temperature 1 cup Heath Toffee Bits 1/2 cup sugar 1/2 cup brown sugar 1 teaspoon vanilla extract 1 egg plus 1 egg yolk 2 cups all purpose flour 3/4 teaspoon baking soda 1/2 teaspoon salt 1/4 cup finely chopped almonds 2 Tablespoons Cream of Coconut (Coco Lopez or Goya) 2 1/4 cups sweetened shredded flaked coconut Instructions Beat together butter, toffee bits and both sugars, until light and fluffy, about 5 minutes. Add in egg and egg yolk, and vanilla. Beat well. Combine flour, baking soda and salt. Gradually add into butter mixture until combined. Add in chopped almonds, cream of coconut and shredded coconut, mix until fully incorporated into dough. Line a baking sheet with wax paper or parchment paper. Using a medium cookie scoop or a spoon, measure out cookie dough and shape into balls, place on cookie sheet and then flatten to about 1/2 inch thick. Cover with plastic wrap and refrigerate cookie dough over night, or at least 8 hours. When ready to bake, place cookies on a baking sheet, 2-3 inches apart, these cookies will spread. Bake in a preheated 325 degree oven for 12-14 minutes, just until edges start to turn brown. Remove from oven and let cookies rest on cookie sheet for 10 minutes to finish baking.
