It seems to depend on your ship, but dining can open as soon as 5:30.  That would allow you to get something VERY quick.  However, I've been on ships where dining does not open until 6.  You'd be out of luck on a 6:30 show.

Yes the vast majority of passengers decide on the show time and when to have dinner.  There is flexibility for everyone's needs.

Our show times on Silhouette’s recent Mediterranean cruise were 8.30 & 10.30 pm, except for the first night when they were 7 & 9 pm. 
They were changed on the second night to accommodate the Women’s European football final and never reverted back.
