It is hard to describe what it is. It does have it's own set of dish ware. Our server was very proud of the dishes and turned over a plate to show us that the plates are handmade and signed. Also, great care is used in serving the cuisine---it is done with some flair. The offerings are divided into three categories and you are encouraged to order as much as you would like. The categories are: Chilled, Refreshing, Quick Fried; Smoke, Braised, Tagine; and Cheese, Sweets. Here is a sample menu from June 16th on the Ovation Chilled, Refreshing, Quick Fried Iberico Pata Negra "Ham" (shaved honeydew melon, crisp fennel, castelvetrano olives, ricotta salata) Calamari Basquaise (roasted garlic, pine nuts, tomato confit, pan catalan) Trofie Pasta (beef shank ragu, shiitake mushrooms, amarillo tomatoes, toasted Japanese pancake horseradish crumbs, fontina cheese Smoked, Braised, Tagine Nigerian Shrimp "Provencale" (piquillo pepper butter, roasted vegetables, patatas bravas, chipotle aioli Rotisserie "Peking Duck" (Chinese mo-shu pancakes, hoisin, cucumber, bok toy, fried rice, plum sauce Roasted White Asparagus (confit cocktail tomatoes, grated lemon zest, green pea espuma) Cheese, Sweets Farmer S Style Camembert (honey pommery, mustard, pain grille) "Pommes Au Four" (baked apple, brown sugar butter, ginger bread, calvados gelato) Yogurt Citrus Mousse (strawberry romanoff, white chocolate and cranberry biscotti, orange sorbeto) The portions are fairly small--almost like Tapas, but not quite. Other grammatical errors slip through with rapid typing---or on the fly editing without rechecking. We are not big fans of the Patio Grill at night but this seems more our speed. We look forward to trying it on Ovation in November and I’m crossed by my fingers that it migrated to Odyssey by the transatlantic as it seems like it’s perfect for the Caribbean sailings that start in December.
