Got a pair of yummy Berkshire Heritage pork chops on Saturday. Decided to try a new recipe with them tonight.

Chops grilled for a few minutes then finished off to the side of the grill with indirect heat.

Served with blueberry sauce! An unusual combination. Sauté shallots with fresh thyme. Add red wine and reduce. Add lots of blueberries along with a chipotle pepper and adobo sauce, and cook until they pop. Finish with a bit of balsamic vinegar, off the heat.

Chops and sauce were served with farro and a garnish of fresh thyme. The sauce had a bit of kick. It went well with a zinfandel from Sonoma. And it looked nice on our new plates too.

Beautiful JP!  And tasty too! 😁

That picture looks like prime rib to me......looks really good but maybe I am thinking of a different steak........when I think of a filet, it is something like this:

Sorry it was prime rib. Fillet came 2 days later. And yes if you really look you can see evidence of cooking on the edges. To me it was excellent.

I do like medium rare, but must admit your steak was not bleeding.  Well cooked and well rested.  Now, back to your trip report…….

No need to apologize......there are a lot of different cuts of beef out there🙂

I saw this product in my local supermarket on Friday (true!):

Ironically, the food in those packets is cod, not orca.  The dinner discussions might be interesting, though:

Husband:  What's for dinner?

Wife:  Cod Orcastrations.

Husband:  I'll have cod.

I am very familiar with #17. I keep writing the name down but I can't seem to remember it. 😉

I knew a few of the others from medical school. But less than half.
